About Kawsay
Kawsay comes from the hilly forests where the Andes descend towards the Amazon. It is grown by communities of the Kichwa-Lamista people. Kawsay is the Quechua word for life, but in Andean cosmology it means much more than simply existing: it is the living, sacred energy that runs through everything.
The cacao is grown by small farmers on plots of a few hectares, in an agroforestry system shaded by timber and fruit trees, alongside crops for their own use. The harvest runs mostly from October to March. The beans are then fermented in wooden boxes and slowly dried.
In the cup it is deeply chocolatey, with very gentle acidity and no bitterness at all, carried by clear floral and herbal notes.
